When it comes to the cosmetic finish of your stone benchtop (the edge), you have a choice of 20mm or thicker depending on the look you want.
Regardless of which stone thickness you select, a fascia front or mitred skirt can be added at a length of your choice. This fascia front/mitred skirt is essentially a trimming added around the outside of your top, which gives the impression of a thicker stone than actually used.

Basically what you are trying to do is make the stone look thicker than its structural 20mm thickness, which cosmetically results in the look you prefer.
This is a purely cosmetic enhancement, as under the cupboards, the stone is still only 20mm thick and therefore does little to nothing for overall structure. This method keeps the price down and leaves a seamless finish. Viewed from the outside, no one would be the wiser.
Thin or thick, the final finish is up to you.
